Summer Tomato Basil Pasta
Ingredients
- Barilla pasta
- Spinach
- Basil leaves
- Kale
- Garlic
- Avocado oil
- Salt
- Lime
- Peas
Method
- Add 500ml water to a pot, add a little salt and bring to a boil. Add pasta and cook 2 minutes less than usual for a chewy texture.
- Heat avocado oil in a pan, add minced garlic and chopped onion, sauté for about 3 minutes, then add some pasta cooking water.
- Add peas, spinach, and cooked pasta, stir-fry until the sauce thickens.
- Finally, add fresh spinach and basil leaves, season with fish sauce, salt, chopped kale, and a little lime juice.
